It is finally summer, oh my goodness that it feels so nice to utter those words! I think we can all agree this year summer is more then welcomed. There have been years prior where if offered the option I would skip ahead to Autumn. Not this year, this year I am SO ready to eat all the juicy jersey tomatoes and seasonal fruits. One of my favorite summer time meals is a delicious colorful summer salad. And I have a favorite bit of veg I love to throw into the mix. So let me start with a little confession, I love red onions, What I am about to say will sound strange to some. I have been known to eat red onion like normal people eat an apple. I know I’m strange but alas I have no problem admitting it. Even better this salad is perfect for my fellow intermittent fasters and Mediterranean dieters out there!
RECIPE
- 2 red onions
- 2 cups of cherry tomatoes
- 1 cup of black olives
- Trader Joe’s Everything But The Bagel Sesame Seasoning
- My Zesty Tahini Dressing + to taste
DIRECTIONS
Clean and chop onions into quarters and add to a large bowl. Blend in the rest of your ingredients and add the tahini dressing. Finish it off with a very generous dash of your everything seasoning and simply ENJOY!
